The Rainbow Lobster (Panulirus ornatus) is a large edible spiny lobster (without claws) and is also known by other names like: Ornate Rock Lobster, Tropical rock lobster, Ornate rock lobster, Ornate Spiny Lobster, and Ornate Tropical Rock Lobster.
Seafood is a major staple of Taiwanese night markets. Here, a super fresh rainbow lobster is prepared two ways. The lobster head and shell were used to make a delectable soup and the meaty lobster tail was seasoned and baked to perfection.
